This is a favorite at our house especially during the summer months. It's easy to make and goes fantastic with the tortilla chips at Farm Boy.

3 or 4 large tomatoes (peeled and diced)
1 lg can of diced tomatoes (28 oz)
1 sm can of tomato paste
2 to 3 jalapeno peppers (seeded and chopped)
3 Tbsp fresh chopped cilantro
2 tsp salt
1 tsp garlic powder
3 Tbsp olive oil
¾ red onion (peeled and diced)
Preparation
Mix all ingredients in a large bowl. Add batches to a blender and use the low pulse mode to get it to the right consistency. Less if you like chunky. Refrigerate for 2 hours.
